INNOVATIVE OLIVE OIL - RESEARCH & DEVELOPMENT



PROJECT INNOVATION:

The innovation of the project lies in the creation of a series of new standardized olive oils rich in additional bioactive ingredients, which will have increased nutritional value due to increased content of polyphenols, carotenoids, terpenoids, minerals and vitamins. These olive oils will be designed with the aim of parallel organoleptic acceptance by consumers and increase the shelf life (reduction of tanning and number of peroxides due to the increase of antioxidant content). There are not enough data in the literature to show a study of the increase in the nutritional value of olive oil while at the same time there is strong scientific interest in the utilization of oil by-products to produce value-added products. Based on the above, the innovation of the proposed project is the creation, study and presentation of a series of innovative functional olive oils enhanced with bioactive ingredients, of high nutritional value, with good organoleptic characteristics and potential beneficial effects on consumer health, as they will be studied in vitro in vivo. Finally, a business plan and marketing plan will be prepared for the company as well as ways to utilize and disseminate the results.
