INNOVATIVE OLIVE OIL - RESEARCH & DEVELOPMENT




PURPOSE OF THE PROJECT:

The object of this proposal is the production of a series of innovative standardized olive oils with special nutritional and functional properties. The olive oils produced will be intended for consumption by the general population and will be highly recommended to those who need to consume foods of very high nutritional value and people at risk for chronic diseases such as cardiovascular disease, diabetes and metabolic syndrome. The innovation of the new products will lie on the one hand in the utilization of oil by-products (olive pomace, olive leaves) from which bioactive ingredients will be isolated that will be added to refined olive oils, and on the other hand in the extraction of Greek polyphenols and terpenes. carotenoids and other bioactive substances from local vegetables and fruits. The antioxidant, anti-diabetic and cardioprotective effects of the new products will be studied both in vitro and in vivo. The new products (standard olive oils) will have a high level of organoleptic characteristics, thus enjoying its acceptance and preference by consumers.
